What I Eat In A Day

As a vegetarian I get asked on a daily basis, "What do you eat?" How am I suppose to answer this question? It's an endless combination of possibilities. How does anyone really answer this question? "What do you eat?" It's not like we eat the same meals every day. So hopefully this blog post can give more of an insight as to what I eat on a daily basis and what my grocery list looks like.

My trainer, Coach Brian Vincent, has me on a totally attainable meal plan (blog post on this to come soon) and it has helped a lot. I am the worst kind of vegetarian, because I hate vegetables. I can eat carbs all day long. With his macro diet for me and finding healthier alternatives to every day items, I've found my diet to be completely functional in my lifestyle. Even on days I'm craving Taco Bell. Today, I'm sharing my typical grocery list with you today. This list is just food products and things I tend to buy every week. Also some of my go-to meals throughout the week - even my cheat days!

Ore-Ida diced potatoes

Liquid egg whites
Eggs
Parmesan cheese
Mozzarella cheese
Mozzarella string cheese
Blueberries
Strawberries
Whole wheat thin spaghetti
Jasmine/white rice
Black beans
Chunky peanutbutter
Strawberry jelly
Kodiak power cakes mix
Rice cakes (chocolate or apple cinnamon)
Oatmeal
Nature's Own whole wheat bread
Cary's Sugar Free Syrup


My Go-To Meals

Breakfast
- Granola Parfait (My favorite)
Greek yogurt
Granola 
Strawberries 
Blueberries 

- Egg Bites (Pre-make these for the whole week, pop in microwave for a minute in the morning) 
Liquid egg whites
Cut-up onions
Cut-up red peppers
Mozzarella Cheese
Bake in a muffin tin for 10 minutes

- Toast with spray butter (Spray butter has little to no fat and carbs in it, makes it super easy)

- Kodiak waffles
Morning Star vegetarian bacon

- Dippy Eggs
Diced Potatoes
Toast
Morning Star vegetarian bacon

- Oatmeal
Blueberries
Strawberries

- Coffee - ALWAYS

Lunch
- Peanutbutter & jelly sandwich 
Chips (Depends on the type of chips we have)

- Spinach Salad (I actually get free lunch at work so this may vary from day-to-day, but most of the time I hit the salad bar)

Dinner
- Grilled cheese (a classic)

- Whole wheat pasta with butter (I seriously eat this 6/7 days of the week)
Parmesan cheese

- White rice bowl
Black beans
Mozzarella cheese

Dessert
- Ben & Jerry's Phish Food Ice Cream

Cheat Meals

- Ted's Bulletin Eggs Benedict + Hash Browns
- Taco Bell Cheesy Gordita Crunch + Baja Blast Soda
- McDonald's M&M McFlurry + Caramel
- Olive Garden 5-Cheese Ziti Pasta
- Bar Food!! Cheese Tater Tots, Mac & Cheese, Cheese Fries, Nachos
